Minestrone Soup

A warm and wholesome Italian-inspired Minestrone Soup made with small shells, tender vegetables, savory broth, and hearty beans. Perfect for cozy dinners any night of the week.

INGREDIENTS:

4 ozSan Giorgio® Small Shells
1onions, finely chopped
1garlic cloves, chopped
2 tbspolive oil
5 cupswater
1 cantomatoes, whole peeled, canned, in juice
1 cupchopped cabbage
0.75 cupcelery, chopped
1 tbspbeef bouillon
1 can(15 1/2 oz.) kidney beans
0.25 tspground black pepper
0.25 cupgrated Parmesan cheese

DIRECTIONS:

1. Prepare pasta according to package directions; drain.

2. Meanwhile, in a large saucepan, cook onion and garlic in oil until tender.

3. Add water, tomatoes, cabbage, celery and bouillon. Bring to a boil; simmer 20 minutes or until vegetables are tender.

4. Add cooked shells, beans and ground black pepper; simmer 5 minutes.

5. Stir in Parmesan cheese. Serve.
