Lemon Pepper Linguine with Scallops and Peppers

Zesty, flavorful lemon pepper linguine with succulent scallops and sweet peppers, a deliciously elegant meal that's easy to make.


1/4 cupolive oil, divided
16 eachlarge scallops
1onion, finely chopped
1/2red bell pepper, chopped
1/2yellow bell pepper, chopped
1/2orange bell pepper, chopped
1/2 cuplemon juice
1 tspgrated lemon zest
1/2 tspground black pepper
2 Tbspsfresh chives, snipped
12 ozSan Giorgio® Linguine


  1. Prepare pasta according to package directions; drain.
  2. In saucepan, heat 2 tablespoons oil; sear scallops 2 minutes per side, or until golden brown and cooked through; remove and set aside.
  3. To saucepan, add remaining oil, onion and peppers; saut├ę until tender.
  4. Add lemon juice, zest, ground black pepper, chives and scallops; heat through.
  5. Toss cooked linguine with scallop mixture.
