Stuffed Manicotti with Meat Sauce

Baked pasta filled with a savory mixture of ground meat and cheese, topped with a rich tomato–meat sauce.

INGREDIENTS:

For the Sauce:
1 tbsp.olive oil
1 lb.ground beef
0.50 cuponion, chopped
1garlic cloves, minced
28 oz.diced tomatoes
6 oz.tomato paste
2 tsp.salt
2 tsp.brown sugar
1 tsp.fresh basil leaves
1 tsp.fresh oregano leaves
1 tsp.dried parsley flakes
0.25 tsp.ground black pepper
For the Filling:
0.75 lb.ground beef
4 tbsp.green onion, minced
1 tsp.salt
0.25 tsp.ground black pepper
15 oz.ricotta cheese
8 oz.shredded mozzarella cheese
1egg, lightly beaten
1 tsp.dried parsley flakes
8 oz.San Giorgio® Manicotti
0.25 cup0.25 cup grated Parmesan cheese

DIRECTIONS:

1. Preheat oven to 350º F.

2. Sauce: Heat oil in large skillet; cook ground beef, onion and garlic. Drain excess fat. Add tomatoes, paste, salt, brown sugar, basil, oregano, parsley and pepper. Simmer 45 minutes.

3. Filling: Cook ground beef, green onion, salt and pepper. Drain and cool. Combine ricotta, mozzarella, egg, parsley and cooled beef.

4. Prepare pasta according to package directions; drain. Fill each tube with 1/4 cup filling.

5. Pour 1/3 of the sauce into a 9 x 13-inch baking dish; arrange stuffed pasta in a single layer.

6. Cover with remaining sauce and sprinkle with Parmesan. Bake covered 30 to 40 minutes.
