Rotini with Red Spinach Sauce

Rotini pasta meets a slow-simmered red sauce enriched with spinach, garlic, and Italian seasoning for a simple, wholesome weeknight meal.

INGREDIENTS:

10 ozSan Giorgio® Rotini
0.25 cupolive oil
0.25 cupchopped onion
6 clovesgarlic, minced
1.50 cupschicken broth
28 ozdiced tomatoes
6 oztomato paste
1 tspsalt
0.50 tspground black pepper
0.25 tspdried Italian herbs
0.25 tspdried red pepper flakes
4 cupsfresh spinach leaves, coarsely chopped

DIRECTIONS:

  1. In a medium saucepan over medium heat, heat oil, add onion and garlic. Cook three minutes or until tender, but not brown.
  2. Add chicken broth, tomatoes, tomato paste, salt, pepper, Italian herbs and red pepper. Heat to boiling; reduce heat. Simmer, uncovered about 15 minutes. Add spinach; cook 2 minutes or until wilted.
  3. Meanwhile, prepare pasta according to package directions; drain.
  4. Toss hot sauce and sauce. Sprinkle with cheese.
