Rotini with Red Spinach Sauce

Rotini pasta meets a slow-simmered red sauce enriched with spinach, garlic, and Italian seasoning for a simple, wholesome weeknight meal.

INGREDIENTS:
| 10 oz | San Giorgio® Rotini |
| 0.25 cup | olive oil |
| 0.25 cup | chopped onion |
| 6 cloves | garlic, minced |
| 1.50 cups | chicken broth |
| 28 oz | diced tomatoes |
| 6 oz | tomato paste |
| 1 tsp | salt |
| 0.50 tsp | ground black pepper |
| 0.25 tsp | dried Italian herbs |
| 0.25 tsp | dried red pepper flakes |
| 4 cups | fresh spinach leaves, coarsely chopped |
DIRECTIONS:
- In a medium saucepan over medium heat, heat oil, add onion and garlic. Cook three minutes or until tender, but not brown.
- Add chicken broth, tomatoes, tomato paste, salt, pepper, Italian herbs and red pepper. Heat to boiling; reduce heat. Simmer, uncovered about 15 minutes. Add spinach; cook 2 minutes or until wilted.
- Meanwhile, prepare pasta according to package directions; drain.
- Toss hot sauce and sauce. Sprinkle with cheese.
