Dijon Macaroni and Cheese with Ham

16 ozSan Giorgio® Elbow Macaroni
2 Tbspsbutter
1/4 cuponion, finely chopped
2 Tbspsall purpose flour
2 cupsmilk
3/4 tspsalt
1/4 tspfreshly ground black pepper
8 ozshredded sharp Cheddar cheese
8 ozAmerican cheese, cubed
3/4 cupcooked ham, diced
2 TbspsDijon mustard
non-stick cooking spray


  1. Heat oven to 350ºF.
  2. Prepare pasta according to package directions; drain.
  3. In medium saucepan over medium heat, melt butter; add onion, if desired. Cook 2 minutes. Add flour; cook 1 minute, stirring constantly.
  4. Stir in milk, salt and ground black pepper. Cook, stirring frequently, until mixture boils and thickens.
  5. Stir in cheeses, ham and Dijon mustard. Fold in cooked pasta.
  6. Coat a 2-quart baking dish with non-stick cooking spray. Turn pasta mixture into dish and bake 30 minutes or until hot and bubbly.
