Bow Ties and Spinach Salad

A playful twist on the classic salad — tender bow ties and fresh leaves of spinach come together in a vibrant and satisfying dish.

INGREDIENTS:
| 6 oz | San Giorgio® Farfalle |
| 2 cups | fresh spinach leaves, chopped |
| 1 cup | cherry tomatoes, halved |
| 1/4 cup | green onion, sliced |
| 1/4 cup | light olive oil |
| 2 Tbsps | lemon juice |
| 1 tsp | Dijon mustard |
| 2 | garlic cloves, chopped |
| 1/2 tsp | salt |
| 1/2 tsp | sugar |
| toasted pine nuts (optional) |
DIRECTIONS:
- Prepare pasta according to package directions.
- In large bowl, combine cooked pasta, spinach, tomatoes and green onions.
- In small bowl, combine all remaining ingredients except pine nuts; mix well.
- Pour dressing over spinach mixture; toss well. Top with pine nuts if desired. Serve immediately.
