Bow Ties and Spinach Salad

A playful twist on the classic salad — tender bow ties and fresh leaves of spinach come together in a vibrant and satisfying dish.
|6 oz||San Giorgio® Farfalle|
|2 cups||fresh spinach leaves, chopped|
|1 cup||cherry tomatoes, halved|
|1/4 cup||green onion, sliced|
|1/4 cup||light olive oil|
|2 Tbsps||lemon juice|
|1 tsp||Dijon mustard|
|2||garlic cloves, chopped|
|toasted pine nuts (optional)|
- Prepare pasta according to package directions.
- In large bowl, combine cooked pasta, spinach, tomatoes and green onions.
- In small bowl, combine all remaining ingredients except pine nuts; mix well.
- Pour dressing over spinach mixture; toss well. Top with pine nuts if desired. Serve immediately.
