Creamy Roasted Carrot & Parmesan Rotini

Sweet roasted carrots blended into a creamy, vitamin-packed orange sauce that is perfect for the whole family!

INGREDIENTS:

8 ozSan Giorgio Protein Rotini
3large carrots, peeled & chopped
2cloves garlic
1/2 cupmilk
1/2 cupgrated parmesan
1 tbspolive oil
Salt & Pepper

DIRECTIONS:

  1.  Roast carrots and garlic at 425°F with olive oil, 20 min.
  2. Cook pasta per directions on box, set aside.
  3. Blend carrots/garlic with milk, parmesan, salt, and pepper.
  4. Toss with hot rotini and serve extra cheese on top.
